A cookie sheet is the flat cousin of a baking sheet. It has no rim or only a low lip on some sides, so cookies slide off and air moves around the dough. Some are plain aluminum, some are nonstick steel, and some use two layers with air between them.

The six pans below cover a classic aluminum sheet, two insulated styles, a rimless two-pack and a commercial-style sheet. Sizes, materials and features come from each product’s listing page. We have not used these pans ourselves. Coating and material statements are the makers’ own.

What to Look For

Feature Why it matters

An uncoated aluminum sheet with outside dimensions of 15.7 by 13.9 inches and an inside of 14.1 by 13.1 inches. It has three raised edges and one smooth front edge so baked goods slide off, and the maker says it is made in the USA with hand wash only care.

Suits: a plain aluminum classic. Strengths: a smooth edge for sliding and no coating to wear. Weaknesses: hand wash only, and the three raised edges mean it is not fully rimless. Skip it if you want a nonstick finish.

Care and Setup

  • Follow each listing’s wash instructions; several say hand wash only.
  • Let a hot pan cool before it meets cold water.
  • Use parchment on uncoated aluminum if cookies stick.
  • Measure your oven before choosing a large sheet.

Mistakes to Avoid

  • Expecting a rimless pan to hold liquid.
  • Putting a sheet that is too wide into a small oven.
  • Using metal tools on a nonstick finish.
  • Skipping the size check on a jumbo pan.

What is the difference from a baking sheet?

A cookie sheet has open or low edges. A baking sheet has a full rim all around. See our baking sheets guide for rimmed pans.

Are insulated sheets different?

They use two layers with air between them. The makers say this slows browning on the bottoms.
